Guest guest Posted June 26, 2008 Report Share Posted June 26, 2008 There's one in the Veganomicon, which is very similar to one my mom used to make, and I've made lots of times before (though I sometimes can be very lazy and use ketchup instead of tomatoes if I only need a little bit, or in a bbq butter bean recipe I grew up with). Could you sub the vinegar with apple cider vinegar? It's not as strong as white vinegar, or is rice vinegar ok, though i guess that counts as a grain? I don't know/can't think of any thing else to sub it with for the sourness. Maybe lemon/lime juice - but then I'd probably go a bit light on it - citrus-y bbq is pretty awesome, though - so it could work. Maybe cut back on the sugar and use OJ? Ok, Now I think I have to experiment with this, hee. 1tbsp vegetable oil 1 med yellow onion, chopped as fine as you can 2 cloves garlic, minced 1/4tsp salt 1tsp red pepper flakes (or cayenne or hot sauce instead if you like) 1 28oz can crushed tomatoes (or sub tomato sauce or diced tomatoes- and puree at the end) 1/3c molassas (can replace with maple syrup or sugar or agave nectar) 1/3c white vinegar (It doesn't say about subbing the vinegar, but I'd guess that the ACV would work fine, as would rice vinegar) 2 tbsp sugar (or replace with same sub's for the molassas) 1tbsp prepared yellow or dijon mustard 2 tsp liquid smoke saute' onion until brown, add garlic, saute' for 1min longer. add all other ingredients except for yellow mustard and liquid smoke. Cook at least 30 min's and up to 1hr stirring occasionally. Lower heat if sauce begins to splatter. Add mustard and liquid smoke, taste for sweetness/sourness and adjust flavors if necessary. Cook 5 min's longer. If you like a smoother sauce, puree. Guest guest Posted June 26, 2008 Report Share Posted June 26, 2008 Hi Admartin, Not exactly what you're asking for, but my partner has made a vegetarian BBQ sauce just using Robbie's vegetarian worchester sauce in place of regular worchester sauce. I think it has honey in it, though, so if you don't use honey, that won't work either. Thought I'd mention it just in case it might work. Good luck! I don't use a recipe, but I'll try to approximate. This is fabulous on the grill, too. 3 cups good veggie or mock chkn broth 1/4 cup good tequila (tradional is great, inexpensive one, cabo wabo reposado is my fave) juice of one lime tablespoon sugar pinch salt (to taste) diced jalopeno couple of slice cloves of garlic 1/2 chopped onion chili powder cumin Bring to a boil, simmer uncovered until reduced a bit or tastes really rich. I taste it often while it cooks, adjusting the seasoning as I go. I wait to put the salt in until it had reduced, otherwise it winds up too salty. I strain and freeze the leftover sauce in a jar.
