Lunchbox ideas?

I know this has probably been covered here a billion times, but PLEASE can I

get in one more request? I need lunchbox ideas for camp for my girls. We

aren't into the " bento " thing--they will not be bringing veggie sushi, nor will

I be making 100 different creative gourmet meals for them every week. NOT

that that's a bad thing. It's just that we are still at the " sandwich, juice

box, and a couple of snacks " stage.

 

The girls do not do dairy, but we will do eggs. We limit soy--they have

rarely had anything with tofu (but I would be willing to try things with tofu

on

them--seitan I am NOT familiar with at all, and I won't be experimenting just

now). Salads? Pitas? Finger foods?

 

AACK! I HATE having to think of five weeks' worth of lunchbox ideas!

I had this same problem when I was making my

daughters lunches. My favorite one is a crunchy

burrito. It is basically a wrap. In a tortilla you

spread a thin layer of peanut butter, then add honey,

rasins, and granola. Then wrap it up like a burrito.

Sometimes I added sliced banannas. I know you don't do

dairy but I personally like to dip mine it yougert.

Marilyn,

 

One of the things that helps for us is making a little extra dinner the night

before and packing up leftovers for lunch. Even if your kids prefer a sandwich,

you can put whatever you had for dinner between two slices of bread or wrap in a

tortilla. If nothing else, pack up the leftover veggies in the lunch to go with

whatever sandwich they want.

Since you limit soy I don't know how much of this will be helpful.  I have done

things in a thermos (different kinds of soup, veggie chili, vegetarian baked

beans) with snacks like pretzels or animal crackers and a juice box.  Fruits in

a container (like grapes or blueberries) or fruit cups (like the dole pineapple

or peaches) or a banana or apple as sides.  I also do things like hummus in pita

bread and try to get some veggies in her with shredded carrots or crumbled

broccoli florets mixed in with the hummus inside the sandwich.  I also sometimes

do a small container of hummus and then put veggies like baby carrots, broccoli,

cauliflower whatever your kids like in another container to dip into the

hummus.  Another thing I do is make little pigs in a blanket with bread dough

and smartdogs which are vegan hotdogs.  I cut the smart dogs in half.  You could

also use a veggie sausage link instead.  They aren't as good cold as they are

fresh out of

the oven but my daughter has been taking them to school for 3 years now.  We

have also done things like smart deli slices (veggie turkey/ham/bologna) and

crackers.  I cut the smart deli slices up into triangles and she makes little

sandwiches with them.  She goes through phases where she really likes something

in particular and that is mostly what she eats for lunch for a while.  And then

she'll get tired of it and want to do something else.

Robin--I think everyone could benefit from your list, not just me. I agree

Here is an excerpt from one of my blog posts regarding lunches:

 

For his " entree " , I alternate between PB & J, pita bread triangles

with hummus, crackers with almond butter, and " mock meat " sandwiches

with Rice cheese and mustard.  

 

In

the large, lidded compartment (if it doesn't contain hummus or almond

butter), I usually include applesauce, banana rice pudding, or soy yogurt.

 

In

one of the smaller compartments, I usually put fresh fruit or veggies. 

The most common ones are grapes, raspberries, kiwi, raisins, and

carrots sticks with a side of dairy-free ranch.  

 

 

And finally, he gets a dessert.  When they go on sale, I stock up on fruit

leathers (Stretch Island and Fruitabu).  I also try to have a few Organic Dark

Chocolate Bug Bites on hand each week.  Sometimes I put in a homemade raspberry

muffin or a Fauxstess Cupcake (shown here, Halloween-style!)..

 

For a drink, he gets apple juice, soy milk, or sometimes a juice box of Kidz

Dream Orange Cream Smoothie (flavored soy milk).

I know you said you want to limit soy, but did not say why. I am

limiting soy as well but not temphe, whcih I understand is a

lot " better " to eat as it's a fermented soy. You can make

incredibly good sandwich spreads out of it with mayo substiute and

any added veggies etc you like. my one year old even likes chunks

of it plain , but not me! ~Danielle
