I need one low in sugar, not one that uses honey, molasses, and brown sugar, all in the same bar, for example. I've seen so many like that! I also want one that is vegan (no eggs, can use dairy subs), and lowfat--not one with a cup of oil or margarine in it. Anyone have a good recipe for me, or am I asking too much? These bars are really a great snack…they have the consistency of a chewy granola bar. Perfect for kids…really easy to take with you. They are not too sweet…just perfect. It’s also wheat-free…which is a nice bonus. Easy Pleasin’ Oat Bars 2 cups ground oats (blend quick oats in food processor) 1 cup quick oats 1/2 t sea salt 1/4 t cinnamon 1/4 pure maple syrup 1/3 cup fruit sweetener or other thick honey alternative 1/4 vanilla or plain non-dairy milk 2 T canola oil Preheat oven to 350 degrees. In a large bowl, combine all the dry ingredients. Add the wet ingredients into the dry mixtures, stirring until well combined. Transfer the mixture to a lightly oiled 8 x 8 or 8 x 12 baking dish and press down until it’s evenly distributed. Using a sharp knife, cut to mark out the bars before you bake them to make it easier to fully cut and remove the bars once baked. Bake for 19-21 minutes, then remove and let cool in pan. Once cool, use a sharp knife to fully cut the bars, then remove with spatula. Guest guest Posted July 11, 2008 Report Share Posted July 11, 2008 I flipped through my recipes and found that most of the granola bars are LOADED with sugars. This one seems less bad: 1-1/2 cups whole wheat flour 1-1/2 cups granola 1/4 packed brown sugar 1/2 tsp baking soda 3/4 cup margarine 1 cup strawberry preserves optional Stir together flour, granola, brown sugar and baking soda. Cut in margarine until mixture is crumbly (you can melt 1/2 the margarine) Pat into an un-greased 13 X 9 X 2 baking pan. You can place 2/3 in the bottom of pan and then spread the preserves over granola. Sprinkle with remaining crumbs. Bake in a 375 degree oven for 20-25 minutes, cool on wire rack. cut into bars. You can also use chocolate chips in you are not using preserves. Guest guest Posted July 13, 2008 Report Share Posted July 13, 2008 This is one that we use (we sub. maple syrup or Agave nectar for the honey), and I know we use about 3/4 to about half of the sugar (in most recipes), still comes out good. The dried fruits make up enough of the sweet, and we prefer things to not be so super sweet, either. We do still use the same amount of Agave nectar, as it does need some liquid in it to hold it together and that's the only source, I think.
