Leftover egg noodles?

You can brown some onions and cook some cabbage (do this all in one

large pot/pan) with a little margarine (or whatever you use) and a

little salt and pepper. It's quite delicious. It's a Polish dish, and

one of my favorites from my childhood. :)

 

If you eat cottage cheese, you can fry the onions (or leave out if

you don't like them) then add the noodles and cottage cheese (we don't

do dairy, but I've made this with tofu 'cottage cheese' I made, maybe

from the uncheese cookbook, and it's quite delicious).

 

There's probably a few kugel recipes (the one from veganomicon is

really very good, but I'm guessing you do dairy/eggs? so there's

probably more that you can find online, too)

 

You can do a stir-fry and instead of rice, use noodles, pan fry with a

little soy sauce to make them a little crunchy, even veggies in sort

of a 'gravy' could work (I have some really good boullion - Better

Than Boullion- that I use for gravy and soups, it's not too salty,

and very very good/rich)

 

You can make a pasta fagioli - tomatoes, onions, beans, corn, whatever

other veggies you want, garlic, etc, don't make it like a soup (I've

seen some that are) but I make mine like a very thick/chunky 'sauce'

more it's like pasta with stuff in. :) My son likes this one (and you

can add kale or swiss chard or other greens, too) I use a variety of

noodles, I like shapes best with this, flat noodles work well, too,

but angle hair/spaghetti are too thin. Linguini is pretty good,

though, it just can't be too thin. We've had a pasta that was about

the size of egg noodles, but they were vegan, and those also work

well.

Or just steam a bunch of veggies, and toss with the pasta- pasta

primavera kind of a dish.

 

I think that's all I can think of.

While not at all healthy, egg noodles are awesome with cheese sauce.  I use real

american cheese, milk, butter, a little bit of parmesean and a couple of drops

of good hot sauce; I throw in frozen sweet peas to alleviate my guilt.
