Easy dinners (formerly bandwagon..)

My criteria for dinners include easy, fast and cheap. Here are some

that fit the bill:

 

 

Squish Squash soup - Take box of butternut squash soup, add tofu

nuggets and with wild rice blend. Wild rice blend takes a while in the

rice maker, might have to make it the night before if you don't have

too much time. I usually start the rice maker an hour before dinner

time. My 5 year old LOVES it! And this is like a $7 or less dinner for

all 5 of us!

 

Another easy one is canned baked beans, canned corn, and tofu nuggets

or rice.

 

We also like Amy's pot pies over rice, too. A little more expensive,

but definitely fast and easy!

 

Boca burgers, corn and oven roasted potatoes is a pretty fast,

inexpensive and easy one, too. I dice the potatoes, add some butter or

oil, seasoning salt and then microwave 3 times at 3 minutes each, then

put them on low broil while I finish the rest of dinner)

 

Another one is pasta noodles and sauce, roasted veggie of choice

(broccoli, cauliflower, asasparagus) and breaded tofu 'cutlets'. (super

firm tofu dipped in bread crumbs, broiled for 10-15 minutes)

 

To make tofu nuggets, start with super firm tofu, cut in cubes.

Marinate (sometimes marinate for only 5 minutes or less!) with soy

sauce (we use bragg liquid amino) some oil (we use toasted sesame),

maybe bbq or A1 sauce, some gomasio or sesame seeds broil in oven for

10 minutes or so. This recipe is extremely flexible and delicious no

matter how you make it!

Here is a great fall-back recipe when you don't know what else to

make. Great way to get veggies in kids. It's kind of like

calzones but way easier (you use a tortilla). You can add vegan

cheese (or reg if you use it). Leave out the hummus (but

it's good mixed w/ sauce).

 

Ann’s Baked Spinach Wraps

 

 

 

 

1 Ezekial tortilla (or other)

Spread w/ hummus

Sprinkle with chopped/shredded cilantro or basil, green onion, carrots

Top with as much fresh spinach and/or arugula as will fit

Sprinkle on some frozen corn and jarred salsa or pizza sauce

Roll up tightly

 

Toast for 10 minutes at 450 (400 for toaster ovens).

 

Yum!
