I was thinking of making a casserole, maybe with brown rice, hash browns, or pasta as a base--but maybe pasta's TOO easy, I don't know. I do NOT want to use meat, and I really don't want to use dairy, although I will use soy subs. I want something that my meat-eating husband will feel resembles a traditional dinner, not something too unusual. Eggs are okay, although I do limit using them. Peanuts/peanut butter is out due to the baby's severe reaction, but I can sub safer nuts or seeds/butters. PLEASE give me some recipes that work for your family!!! I'm tired and out of ideas. Guest guest Posted July 18, 2008 Report Share Posted July 18, 2008 Hi Marilyn, Here's our new popular casserole around here: cooked pasta, can of kidney beans, can of tomato sauce, herbs, left-over veggies, mix all together, top with cheese, bake. It's really good. Another big one here is enchilada casserole - corn tortillas layered with black beans, cheese, corn, peppers, onions, and sauce (I mix salsa with canned tomato sauce, or you can buy canned sauce) - serve with rice and green salad. And if you don't need a casserole - our summer fav is taco salad - lettuce, tomatoes, onions, kidney beans, shredded cheese, broken up tortilla chips, cilantro (if we have it), avocado (on the side, since mixed into the salad, left-overs are all gross by the next day) and then we use salsa for a dressing, and our son uses canned tomatoes for his dressing (dressing on the side, too, to avoid the aforementioned grossness of left-overs). We often have that with polenta (we buy the organic tubes of polenta, open the wrapper, slice and bake til lightly browned), rice or quesadillas. Good luck! I add a layer of cheese, usually mixed with tofu and greens Vegetarian Enchilada Casserole 1 can crushed tomatoes in tomato puree (28-ounce) 1 can chunky salsa (14 1/2-ounce) 1 can tomato paste (6-ounce) 2 cans black beans (15-ounce) rinsed and drained 1 can whole kernel corn (15 1/4-ounce) drained 1 can diced green chilies (4-ounce) 1 1/2 tablespoons ground cumin 1/2 teaspoon garlic powder 5 corn tortillas 1 can sliced ripe olives (2 1/4-ounce), drained In a large bowl, combine the tomatoes, salsa, tomato paste, beans, corn,green chilies, cumin, and garlic powder. Mix well. Ladle about 1 cup of this mixture into the bottom of your slow cooker; spread evenly. Top with 1 1/2 tortillas, cutting to fit as necessary. Spread on 1/3 of the remaining tomato mixture. Repeat these layers 2 more times, ending with the rest of the tomato mixture; spread evenly over the top. Sprinkle the sliced olives over all.Cover and cook on the low heat setting about 5 hours. I think they have a special casserole section. The recipes are also rated and people who have tried them leave comments and most of them even have photos. This way you can see what you think your family would like. I have found so many wonderful recipes there. I like to go once a week and pick a new recipe to try, many of them have become family favorites.
