I also recently found onethat I really like: http://vegandad.blogspot.com/ It is not for the gluten-free folks though (there is a large base of seitan in what he makes, but I don't think it all is gluten based). From there I found something on making steamed seitan (appearantly called Kofu) I kind of winged it on the recipe (I used my baked tofu recipe, but steamed it instead of baking it, and it was perfect - it was done when it was firm to the touch). I read somewhere it comes out perfectly every time, and it sure did!
