Toddler munchies?

I am looking for a recipe for something my little one can eat with her

hands. Tonight in Whole Foods, I saw all sorts of " meatballs " , and

veggie potstickers, veggie eggrolls, and veggie " nuggets " . But most

either contained dairy, soy (my daughter can't have soy), or too many

spices for a little kid. I managed to find a couple of choices, to have

something in the freezer for when dh and I are away this week and she's

with her older siblings and other sitters. This will make it easier for

them to feed her when the rest of the family is eating things she can't

have (like pizza or mac and cheese).

 

Since I couldn't find too many choices, I was thinking of making her

some little " nugget " type of foods, to keep in the freezer for future

use. She can't have soy, dairy, or nuts. We do use alternative " milks " ,

and eggs. Maybe a grain or potato based nugget? Brown rice and veggies?

I probably won't get the recipes now for about a week, since we're

leaving on vacation tomorrow, but I didn't want to forget to ask, so I

will check for the responses when I get home. TIA! Marilyn

These are some things from the Super Baby Food book, by Ruth Yaron:

(there's a bunch, and they're all called Toddler Hors D'oeuvres - I'll

give you ones that seem more like a meal rather than a snack like the

granola balls/bars)

Once they're formed, cook as follows:

bake on greased baking sheet in pre-heated 350degree oven for

10-15min. Or in fryingpan on top of stove for a few min's turning to

cook all sides. Drain to absorb some of the oil. Refridgerate or

freeze

Variations: instead of balls, press into baking pan, bake in preheated

350 degree oven for 15-20 min's cut into bars and refridgerate or

freeze (pizza cutters work best for this, and be sure to not cut into

pieces that are windpipe size)

Variation -instead of bars/balls make other shapes, or flatten with

hand and use cookie cutters, chilling mix will firm it up and make it

cut more easily.

 

Recipes:

 

Sweet potato hors d'oeuvres

mix together flesh from 2 cooked sweet potatoes

1 beaten egg (easily sub with vegan versions)

2Tbsp 'milk'

Form balls and roll in

1/2c whole wheat bread crumbs or wheat germ mixed with 1/2 tsp finely

minced parsley

Bake or fry (if real egg is used, be sure it gets thoroughly cooked)

Variations:

Use 1c canned pumpkin or cooked carrot puree instead of sweet potatoes

(or a mixture of these) Or cooked green veggies ( kale, broccoli,

greens(beet, turnip,dandelion, mustard, collard), brussels sprouts,

asparagus, swiss chard, okra, peas with edible pod, spinach)

 

red lentil hors d'oeuvres

cook 1 c. split red lentils (or other lentils) to yeild 2c. cooked lentils.

Fry 1 finely chopped onion until soft (I pan fry in minimal canola oil)

mix onions and lentils and add 1/4c wheat germ

Form into balls (will be very sticky) and bake or fry

Variations:

shape into patties or cutlets instead of balls and fry. You can also

use ground oatmeal (easy to do in a blender/bullet/etc) instead of

wheat germ

 

Bean Balls

1c mashed cooked beans

1/2 c ground nuts/seeds (if your baby has been OK'd for these)

whole wheat bread crumbs

Mix all using enough crumbs to make mix a cohesive enought to be

rolled into balls you can cook these, but don't have to

 

Oh, there's also a variety of LOAF type things you can make, just plug

your ingredients in, and it will create teh recipe for you:

I'm pretty sure I've frozen then and cooked again and they were fine.

If for your child, for ease of others feeding her, maybe pre-slice and

then freeze. :) There's a few loaf recipes in the book, too

 

There are a bunch of things I know of for tofu, but you can't have them. Hrm...

 

Oh, I know - have you ever made your own seitan? Steam it instead of

boiling or baking it - we made some that we put on sticks and made it

into satay. the textures is fantastic, comes out perfect every time!

You can make 'hot dogs' or patties, or nuggets, or just a lump of it

like a 'roast'. There is a good recipe for 'wingz' on

vegandad.blogspot.com...just spice accordingly for you little one. I

used that and then steamed it instead of baking (no breadding though

for the steamed ones, I did bake some, but could have cut down on the

time they were in there as my oven is too hot and I know it. :) They

freeze very well, and they can just pull them out like other nuggets

(and chop into smaller pieces if needed) serve with broccoli or

whatever other veggies and it's healthy, and looks like junk food.

LOL. :)

 

Oh, since you do eggs, there is also an old recipe online somewhere

I've not had a chance to try veganizing it...but it should be fairly

easy, I remember they were fantastic in our pre-vegan days, and before

we knew our kiddo had a milk protein
