Ive been kind of reading along some of the posts but thought it was time to say hello. Hello! I/ we are a family of 7 and are still kinda newbies. Everyone has been doing great with all the new changes but its been so much work for me! It feels like I am always cooking – Not bad exactly, epically not the baking. I love the baking! Its just way too hot lately. Anyway, these are busy back to school days for us. I was wondering if anyone uses a crock pot? I thought that would be a good solution. If anyone has some recipes or some pages that might come in handy I would very much appreciate the help. Or Maybe some other stuff that freezes and can easily be made at short notice – just in case it gets busy(ier)? I really like Fresh From The Vegetarian Slow Cooker, different kinds of things, all that we've tried have been good (there is even a seitan recipe for in the crocpot). I also make double batches of things that I bake (enchillada pie, lasagna, whatever), seitan freezes well, so I made double, or triple batches of it (lately my favorite method is to steam it instead of baking it, I never have good luck with boiling it, but steaming it is just lovely). We have one in the fridge for sandwiches or wraps or tossing into stirfry or beans or whatever. Pretty versatile. Online I like the typical things - fatfree vegan (there's a loaf generator that I love the variations we've made, all different, but very good - good for making extra and freezing, too!), my new favorite is vegandad.blogspot.com, but I also like vegweb.com and vegan-food.com just in general. I know we need to start really thinking of back to school stuff here, as we have a week before we get into it here (and my son's first full day of school, not just 3-4 hours!) So, it should be interesting and probably hectic until we get into the routine. LOL. We have been eating lots of salads, sandwiches, and the occasion bowl of cereal for dinner. I am looking forward to cooking again soon. There is a great veg (not vegan)crockpot (though they don't like me): / Many recipes are very easy to make veg. I have also just wrapped them in parchment and then foil, but only if I knew they'd be frozen for a short time (like made ahead for a bbq the next weekend or something). We've made pizza on the gas grill a couple times this summer. Different and tasty -- and the house doesn't have any heat added to it. If you have a grill outside you might want to check out http://nowheyjose.com/2008/04/13/grilled-pizza/ And for other dishes just do a search for the item and " grill " to see if someone has already worked out the details. Guest guest Posted August 19, 2008 Report Share Posted August 19, 2008 Aloha, I use my Crock Pot (almost) every day. Try baked potatoes..i don't wrap them or anything. Just throw in a pot full ( We prefer Yukon Golds) cover the bottom with about an in of water or broth to keep them moist then cook all day. We use any left overs for topping...usually black bean chili, veggie scramble, etc. Left over baked potatoes get diced and thrown back in at a later date with whatever sauce or dressing is around for a great side dish. Today I have the Crock full of black beans. Tomorrow that will be black bean chili (think Fritoe Pie or maybe burritos). Corn on the cob comes out great. If all else fails just make SOUP!
