Also, for a veg alternative to pudding, you might try the pudding/pie mixes- by Nori (the tofu company- it's been awhile since i've used them and can't remember). I googled it a bit and all I can find is that I should use less soy milk than the box calls for so it will be thick. Any of you tried this before? If I use the box kind (which is rare), I use exactly how much it says to use on the package and it comes out fine. Last night I made a pumpkin pudding using Mori Nu extra firm silken tofu, pumpkin puree, pumpkin pie spice, and maple syrup. Put it all in a food processor and it turned out great. Guest guest Posted September 16, 2008 Report Share Posted September 16, 2008 This has never worked for me from scratch and I gave up on it. It never thickened past a sauce, even refrigerated. I also like the Mori-Nu mixes. At the moment we use Dr. Oeteker's pudding mixes (check ingredients, not all of this brand is vegan). I have been told you can use half the amount of soymilk with this brand but I thicken mine with a handful of finely ground cashews (coffee grinder). The taste is neutral but every now and then I get a larger piece of nut. I also use hemp milk now over soy milk. I don't think I ever tried reducing the soymilk in a homemade/scratch recipe as much as by 1/2 and I never tried the cashew trick either. These may work for you. I do use a little less milk than the directions state but not too much less. You just have to keep stirring it and it will thicken once it boils. Guest guest Posted September 18, 2008 Report Share Posted September 18, 2008 This is the recipe I use for Chocolate Pudding (don't know where I got it from) 2/3 cup vegan sugar 1/4 cup cornstarch 3 tablespoonsful unsweetened cocoa 1/8 teaspoonful salt 2 3/4 cup soy milk 2 tablespoonsful of Earth Balance 1 teaspoonful of vanilla Combine all dry ingredients in bowl and wisk lightly to combine. Stir in 3/4 cup soy milk and mix till smooth. Add that mixture to 2 cups of soy milk in pan. Bring to boiling, stir/wisk constantly. Boil for 1 min. Remove from heat and stir in 2 tablespoonsful of Earth Balance and 1 teaspoonful of vanilla. Chill. It can be made in microwave. After bringing to boil, continue to cook and stir every 2 min. until thick. Make sure you use a large microwavable bowl to keep it from boiling over. I have better luck cooking with ricemilk.
