Pudding with soy milk

I'm pretty sure you can use soy or hemp milk the same as cow's milk. I've

done it, but it was a while ago. I'm sure it was just fine, though. Rice or nut

milks might be too thin--not sure. Marilyn

Yes, i've done this before, and it works just fine. I don't think I lessened the

amont, either.

Also, for a veg alternative to pudding, you might try the pudding/pie mixes- by

Nori (the tofu company- it's been awhile since i've used them and can't

remember). All you do is mix the mix with a block of tofu. delicious and full of

protein!

Pudding with soy milk

 

 

Have any of you ever tried to make pudding with soy milk instead of

cow's milk? I was thinking of trying a simple banana pudding with some

bananas, vegan vanilla cookies, and some vanilla pudding. But then I

wasn't sure how the pudding would do with soy milk. I googled it a bit

and all I can find is that I should use less soy milk than the box

calls for so it will be thick. Any of you tried this before?

I make pudding all the time with soy milk. If I use the box kind (which is

rare), I use exactly how much it says to use on the package and it comes out

fine. Last night I made a pumpkin pudding using Mori Nu extra firm silken tofu,

pumpkin puree, pumpkin pie spice, and maple syrup. Put it all in a food

processor and it turned out great.

This has never worked for me from scratch and I gave up on it. It never

thickened past a sauce, even refrigerated. I also like the Mori-Nu

mixes. At the moment we use Dr. Oeteker's pudding mixes (check

ingredients, not all of this brand is vegan). I have been told you can

use half the amount of soymilk with this brand but I thicken mine with

a handful of finely ground cashews (coffee grinder). The taste is

neutral but every now and then I get a larger piece of nut. I also use

hemp milk now over soy milk.

 

I don't think I ever tried reducing the soymilk in a homemade/scratch

recipe as much as by 1/2 and I never tried the cashew trick either.

These may work for you.

Soymilk works for me when I use the kind of pudding that you have to

cook. I do use a little less milk than the directions state but not

too much less. You just have to keep stirring it and it will thicken

once it boils. I usually start with 1/2 cup less then add more if

needed.

This is the recipe I use for Chocolate Pudding (don't know where I got

it from)

 

2/3 cup vegan sugar

1/4 cup cornstarch

3 tablespoonsful unsweetened cocoa

1/8 teaspoonful salt

2 3/4 cup soy milk

2 tablespoonsful of Earth Balance

1 teaspoonful of vanilla

 

Combine all dry ingredients in bowl and wisk lightly to combine.

Stir in 3/4 cup soy milk and mix till smooth. Add that mixture to

2 cups of soy milk in pan. Bring to boiling, stir/wisk constantly.

Boil for 1 min. Remove from heat and stir in 2 tablespoonsful

of Earth Balance and 1 teaspoonful of vanilla. Chill.

It can be made in microwave. After bringing to boil, continue

to cook and stir every 2 min. until thick. Make sure you use a

large microwavable bowl to keep it from boiling over.

Variation: Replace chocolate powder with non-dairy carob powder.

 

Total calories per serving: 198

Total fat as % of daily value: 6%

Protein: 7 gm

Carbohydrates: 36 gm

Fat: 4 gm

Calcium: 92 mg

Iron: 1 mg

Sodium: 155 mg

Dietary fiber: negligible

 

From Simply Vegan

Karen's Creamy Rice Pudding

(Serves 8)

 

2 Cups pre-cooked rice

1 1/2 teaspoons cinnamon

1 Tablespoon vanilla extract

1 Cup raisins

1/2 Cup slivered almonds (optional)

3-4 Cups soy milk

 

Mix all the ingredients together in a pot. Simmer until the mixture

begins to thicken (15-20 minutes), stirring occasionally.

 

Remove from stove and serve hot or cold.

 

Total calories per serving: 175

% of calories from fat: 5%

Protein: 5 gm

Carbohydrates: 34 gm

Fat: 3 gm

Calcium: 47 mg

Iron: 1.5 mg

Sodium: 53 mg

Dietary fiber: 2gm

I have had weird results cooking with soymilk; it always seems to curdle when it

boils.  I have better luck cooking with ricemilk.
