Guest guest Posted September 14, 2008 Report Share Posted September 14, 2008 I HATE most " breakfast foods " . I am trying to eat mainly vegan, and it is nearly impossible when it comes to breakfast. Most days, a salad and beans isn't what I want, nor is a stir fry. I don't want cooked or dry cereal. Don't want a smoothie. Eggs are out (for me--my family still eats them). Meat is out. Dairy's out. Tofu's out, in case Abby ends up trying what I make. So what was left? I always stressed out over this first meal of the day. This morning, I flipped through a couple of my vegan cookbooks for some inspiration. Dr. Fuhrman had some interesting looking options in his Eat For Health volume 2. Cookin' Healthy With One Foot Out the Door, recommended to me by a friend, Karen Ranzi, who teaches raw food classes, had some more. But none exactly did it for me. I am not overly fond of sweet breakfast foods, for whatever reason. What to do.... Then I remembered I had a bulk whole grain pancake mix in the cabinet. The pancakes it made were not too popular with my family, so the mix sat unused. I dug it out, and put two cups of the mix into a big bowl. I added about 2 cups of rice milk and stirred until I got a smooth consistency, but not too watery. I grated up two yellow squash, and added them into the bowl and mixed. I sprinkled in some salt, black pepper, and onion powder. Then I fried the pancakes in oil. Wow! Delicious! I'm eating them as I type. Next time, I'd lower the heat, and add more milk to make thinner pancakes (the outside gets a lovely brown really fast--maybe a bit too fast for the inside to cook all the way through). I'd also spray the pan first, and use less oil. They do stick to the pan, but too much oil makes greasy pancakes. I think that corn, or almost any vegetable, would work well in this recipe. I will definitely make these again! Just wanted to share what I did, in case anyone needs a healthy vegan, less sweet option for breakfast--or anytime!
