New book I found

I thought this book might be interesting for some people. There are a few

new books out there for healthy vegetarian meals to put in kids' lunchboxes for

school. I know a lot of people liked them, but the ones I've seen so far are

just not practical for me. There's no way a mom of more than one child, who

is rushing off to work, or being pulled in 20 different directions every day,

is going to take an hour to make a different kind of veggie sushi every day,

or homemade cookies, cut in interesting shapes, every day. No way.

 

This book I found is called The Natural Lunchbox, by Judy Brown. I found it

in Whole Foods. While she does use some ingredients many families might not

use often (like uemboshi vinegar), I still found many recipes I would try. She

also has a great section for healthy substitutions for a lot of commonly

used ingredients. She uses mostly healthier substitutes for refined sugar,

although she does use cane sugar syrup in a few recipes (it's better than corn

syrup!). Soy products are used, but not in every recipe like some books. No

eggs

or dairy.

 

Anyway, I thought the book was a usable one, even for those of us who aren't

packing school lunches. And even for anyone who might not think about making

a vegan meal for their family. Many recipes look (to me at least) like they

would be accepted and not thought of as " weird " by meat eaters. Just an FYI.
