If you have a farmers' market, you can stock up on a couple of boxes explicitly for this purpose; I bought $12 worth of tomatoes, dried them and put them in oil, and it made more than enough to last a year. Guest guest Posted September 28, 2008 Report Share Posted September 28, 2008 I did this with a surplus of our cherry tomatoes this year - I have 3 small jars, but they're packed FULL. I oven dried them, as I didn't have the time/expense of making the frames this year (I've since seen some that I could probably do next time on the cheap). It was easy. Think ahead for next year when they're in the peak season. Other than that, I'd go with checking for them at the farmer's market.
