Guest guest Posted October 13, 2008 Report Share Posted October 13, 2008 The other night we ran in the door late and hungry (and I hadn't yet done the weekly grocery shop). I grabbed ww noodles (mine were spagetti but wouldn't matter) and threw them in to boil. Opened a can of navy beans (all I had, canellini probably would have been better). Put the rinsed beans in a pasta bowl, added the noodles once they were drained and scooped on pesto sauce from a jar-we usually have some on hand. Tossed together with chopped fresh garlic it was great (and quick). If I had fresh veg I would have thrown some into the pasta just before it was finished and mixed it in as well. Awesome with salad and/or garlic bread. And a standby in our house is crockpot curry. Now, it is all canned or frozen ingredients so it is not the healthiest thing out there. I justify it by only having it every couple of weeks when we are really busy and reminding myself that we would just be eating frozen pizza, etc that night anyway. It is delicious on a chilly evening. My son likes it as well and doesn't find it too spicy-I think the tomatoes help. (This recipe will be easier for those in Canada as it uses PC brand sauce but I'm sure there are equivalents everywhere. Just make sure if you use a different sauce, like Patak's, you get a sauce and not a paste.) 1 can PC Organics chick peas 1 canPC Organics whole tomatoes 1 jar PC Madras Hot curry sauce about 2-3 cups frozen peas about 2-3 cups frozen cauliflower carrots can be added but my son hates cooked carrot so I humour him and put them on the side, raw Add everything to crockpot, stir around. I make it up the night before and leave it in the fridge because I am not a morning person. Then I only have to put it on to cook before I leave the next morning. Usually 8 hours on low. If we have time we have it with rice. Sometimes with Naan from the freezer. Sometimes with salad. Depends. It is always a hit.
