Carob Cake preheat oven 350

 

In bowl, combine:

2c whole wheat pastry flour

1-1/2 tsp baking soda

1/4 tsp salt (I use sea salt)

1/3c carob powder

1-1/4c sugar (I use 1/2tsp pure stevia)

mix well.

Blend together

2T ground flaxseed and 3T water

let sit.

In another bowl, combine:

6T oil (I use olive oil)

1-1/3c soymilk (or " milk " of your choice)

2tsp vanilla

Combine liquid and flaxseed mixture and stir. Add dry ingredients and

mix well.

Stir in:

1 T white vinegar

Pour mixture into oiled 10inch springform cake pan and bake for 35

minutes. I make " cupcakes " and cook for only10-12 minutes. Cool for

15 minutes and remove from pan. Enjoy!!

 

teriyaki tofu jerky

1/2c soy sauce (I use Braggs amino acid)

3-4T liquid smoke

1/8c water

1T onion powder

1tsp garlic powder or 1 clove crushed fresh garlic

1T fresh ground pepper

1tsp agave

Cut and drain tofu, slice into strips, about 4-5 mm thick, they may

look big but they will shrink.

Mix marinade ingredients together. Put tofu in single layer in shallow

baking pan or cookie sheet and cover with marinade. Let soak for

several hours or overnight.

Dry tofu in food dehydrator or warm (200 degree F) oven. This will

take 4-8 hours. Flip tofu every hour so it dries evenly. Tofu jerky

keeps indefinitely.

 

~This is time consuming, but awesome! I use a " toaster " oven that has

a convection oven and can only be set for an hour at a time, so it

reminds me to flip the tofu.~
