Guest guest Posted November 7, 2008 Report Share Posted November 7, 2008 I've never heard of them being cured in lard. I have read that some are cured in Lye and a brine, perhaps you mis-heard? I only ever thought they were processed with salt, but vaguely recall the afore mentioned lye maybe a long time ago watching something on TV about olives... I think black and green come from the same trees, they just harvest them at different times. I only read one source ( http://french-windows.blogspot.com/2007/03/olives.html) but it seems to be similar to what I recall hearing. I'd guess the earlier green ones would be better, and maybe that's when they take the ones for making olive oil? No idea for sure though. Maybe someone else is an expert on olives. There are different kinds, but I have no idea which is better for you. I know I like some of the other kinds rather than the generic spanish green w/pimento olives and the typical canned black olives. I like the others better, but I am a fan of them all.
