Guest guest Posted December 14, 2008 Report Share Posted December 14, 2008 Hi, I've done quite a few recipes in The Joy of Vegan Baking and the only one that I had any trouble with was the sugar cookie one. Keep in mind, I substituted white spelt for the all-purpose and that could have very much had something to do with it, but they were crumbly and hard to roll out. The absolute fool-proof vegan sugar cookie recipe that I have found has been on this list before, but it really is perfect: http://www.johnandkristie.com/archives/2005/10/perfect_sugar_c.html . I use agave in the icing as opposed to corn syrup and it worked out fine. I think both VCTOtW and TJoVB have excellent cupcake recipes, but the latter seems to produce more per recipe. Good luck! Guest guest Posted December 15, 2008 Report Share Posted December 15, 2008 I haven't made the JOVB cupcakes, but have made several of the VCTOTW versions and they are all wonderful! For my son's b'day, I always make the VCTOTW vanilla cupcakes (I do the easy, canola oil version) and then I make the JOVB chocolate cake into cupcakes. I top all of them with VCTOTW fluffy buttercream icing. They are always a hit, and many of our non-veg family members have asked for the recipes - especially for the frosting. Everyone loved them even the people who are carnivores. The white icing and the chocolate are both super yummy. The carnivores could not believe i did not use a drop of anything animal related. Isa Chandra Moskowitz also has a book out called Vegan With a Vengeance there is a cupcake recipe in it called fostess cupcakes these quickly became my boyfriends favorite because hostess cupcakes have beef fat in them. You can have so much fun with all of her recipes. Good baking to you! Also one of the recipes called for chocolate extract i couldn't find it anywhere but used dutch process coco and it was awsome.
