Guest guest Posted December 29, 2008 Report Share Posted December 29, 2008 There is a phenomenal one in Vegan Planet by Robin Robertson, called something like " Mom's Best Chocolate Chip Cookies -- Only Better " . I've made it many times and have been asked for the recipe (by omnivores) everywhere I take them. After our recent discussion about posting recipes I won't post it here, but if you don't have the book you can likely get it at the library -- we don't live in a particularly veg-friendly town but our library has it. The Joy of Vegan Baking has some very good ones as well but we still think the best is the Vegan Planet one. Guest guest Posted December 29, 2008 Report Share Posted December 29, 2008 Have you ever tried using the exact Tollhouse recipe with vegan ingredients (vegan chocolate chips, Earth Balance, flax binder)? That's always worked for me. It's pretty unhealthy but a good rare treat. Guest guest Posted December 29, 2008 Report Share Posted December 29, 2008 I use the recipe on the back of the chocolate chips we get (Baker's Chocolate Chunks and Guittard semi-sweet chips). The latter ones come out a bit hard, but you can add a little more liquid to the flax eggs -or use the equiv. for 2 flax eggs and they seem to work fine). My mother-in-law loved the cookies we made -from the Guittard recipe for Christmas (she's amazed we can bake stuff w/out eggs and was just thrilled with the cookies I made for Christmas...she can't have soy, and forgets we don't have a lot of it in general - so she likes to come here to discover new foods and ways of cooking hee). I brought a vegan oatmeal roll out cookie recipe (From the More With Less cookbook - sometimes I add chocolate chips to it and make them as drop cookies, and it works well, too) with me to make with my niece and my son, and she just thought they were wonderful (and that the kids could eat the dough while making them) so, we had a great time with the kids. Just make sure the chips you use are vegan. I don't know any vegan brands off the top of my head. It's a small handful of 7 or 8 ingredients (you can make it healthier by using some spelt flour instead of all white flour) is so easy and takes a short time to make. Non-veggie friends devour them and say they're better than the ones they eat. We make them every few weeks and they're never around long. Guest guest Posted January 2, 2009 Report Share Posted January 2, 2009 I just made these last week for my vegan brother and they were quite good (thought not good FOR you!) but they are cookies not health food ! Experimentally with half of the batch of dough I added a couple of large ripe banannas and those came out amazing, delicious, and much more moist. My vegetarian (but non- vegan) kids loved them all, but particularly the bananna ones. They were suprised to hear they were vegan and i think that helped with kind of the negative perception they have about vegan food! We also tried adding peanut butter to part of the batter but that didn't really improve it. By the way you can find this recipe online by googling vegan with a vengeance chocolate chip cookies.
