We made tacos with some (I think we had some canned ones at the

time)

and they came out fine. I just cooked them w/ spices and we also put

refried black beans on them.

YOu can also use them in something akin to a 'loaf' - you can google

" magical loaf studio " - there's something like a form with radio

buttons you click for what ingredients you have (beans/lentils/ tvp or

whatever) and a binder and so on. It's worked out every time I've used

it (different protein/binders/ etc).

I also add them to vegetarian chili sometimes.

My son's favorite dish is Dahl Mahkani - it's lentils and beans in a

'creamy' tomato sauce - we use soymilk in it, or rice milk (he asks

that we fill his entire lunchbox with it the next day when I make it -

nothing else, no fruit, or anything else...)

I have a recipe I kind of adapted/made up if you'd like it (I've not

got it on me right now and I've got the cold that's going around, but

I might be up for copying it later if anyone would like it)

I'm trying to think of what else we do with them - My son also likes

curries (we leave out the heat, and just use the spices - I was

surprised he liked them so much, but he doesn't like if they're spicy

hot). I would think you could substitute them anywhere a recipe calls

for ground meat stuff.

Hope that helps.

Sure, I'll be happy to share my creation:

Dexter's Dahl Makhani:

1c. Lentils (I typically have brown lentils on hand, but red are

faster cooking, and work nicely too)

4c. water (if using red lentils use only 3c to start out with, the

brown seem to take on more water before they cook all the way)

1 onion, diced

garlic (I use about 5 or so cloves because we love garlic, but you can

use less/more as you like)

1 small can of Tomato Sauce (you can also use a marinara in a pinch)

1 can tomato soup (or 2 Tbsp tomato paste mixed into 1 to 1.5c water)

soy yogurt plain/unsweetened (or about 1/2 c of soy/rice/hemp milk -

unsweetened/plain!)

pinch of Kosher salt

2tsp up to 1 Tbsp (to taste) each of corriander/turmeric/fenugreek/

Garam Masala

1tsp cardamom

1 can of cooked Kidney beans or sub black eyed peas or Garbanzos -I

always drain and rinse mine, reduces the sodium content, too.( I like

a mix of Kidney beans and black eyed peas in this.)

Sautee onion and garlic with a pinch of kosher salt until clear, or

just starting to brown on the edges.

Add lentils and water, cook until lentils are nearly done (soft, still

holding together), but still some liquid remains. Add spices, stir.

Add Tomato sauce and tomato soup (DO NOT DILUTE, just pour in can - or

sub w/ tomato paste in water mix). Cook until lentils are totally done

(some of them will break apart, make the sauce thick). Add

drained/rinsed beans, cook until hot. I sometimes have to add about 1

more cup of water before adding the beans. Once beans are heated

through and lentils are done, take off the heat and stir in the yogurt

OR 'milk'.

Serve with (brown) rice. :)

Oh, you can also add cayenne pepper to spice it up hotter if you like

hot stuff. I keep it neutral for my son, but we sometimes add it to

ours.

Enjoy,

Missie
