Guest guest Posted February 19, 2009 Report Share Posted February 19, 2009 Someone in another group was looking for this; I thought that some of you may enjoy this. It is a great " comfort food " . For those of you not familiar with cholent, it it traditionally eaten for lunch in Jewish homes on Shabbat. VEGETARIAN CHOLENT 2-3 sweet potatoes 1 large onion 1 turnip or parsnip 2 stalks celery 2 carrots 1 potato (I use 2 or three yukon golds) 1 1/2 cups mixed beans (any dried beans are fine) 1/2 cup brown rice 4-5 dates (chopped) 1 T oil water garlic cinnamon honey (I use agave nectar, but just a teeny drop) soy sauce or braggs or tamari salt and pepper Cut vegetables into large chunks and saute in oil. Add rice, beans and water to cover. Simmer until beans are soft (depending on the beans, this could be 1-4 hours), add dates and season to taste.
