Guest guest Posted February 27, 2009 Report Share Posted February 27, 2009 My husband didn't really like tofu until we started using the refrigerated tofu. Neither did I really. If you freeze the refrigerated stuff, then thaw it out and press the water out for 10 minutes, the texture of it changes and it becomes more chewy. The stuff in packs says not to freeze it. We tried scores of tofu recipes, and he finally found one he likes, which is in the book, " Raising Vegetarian Children " , called Crispy Tofu or Tofu Fingers. Also the Vegan Lunchbox blog has a great recipe for Tofu Fish Sticks (http://shmooedfood.blogspot.com/2006/01/tofu-fish-sticks.html) that is really great, too. Another thing to try if you can get past the look of it is tempeh (fermented soy beans). It looks disgusting, but it is easier to digest than soy and even has a meatier texture. Guest guest Posted February 27, 2009 Report Share Posted February 27, 2009 On vegweb.com there is an awesome recipe for Salisbury Tempeh. It was what I used the first time we had tempeh. I use a different gravy recipe now since I have a good veggie stock I like to use (better than boullion NO BEEF - and it's vegan). I just add some spices (dry onion, garlic powder, Thyme) and thicken. There are also different kinds/flavors there's the original tempeh, there's a wild rice and a 3 grain (I think it is). I like the 3 grain one better than the original one, but it's all good stuff. The water packed tofu is much firmer than the Silken ones and overall has a better texture (at least we all think so in our house, too). I do like silken extra firm for making puddings or adding to baked goods. It's trickier with the water pack for me because I can get it by the case from my co-op which is awesome so we always have it on hand.
