We use to be able to get the ones made by Pangea (i think) but they have been discontinued, at least that what the owner of the vegan grocery store in town told me. The only ones they now have are made by Sweet & Sara and they are delicious but two problems -- they have a peanut warning on them (I have a son with a peanut allergy) and they are $8 for a very small container. We really miss having marshmallows. (by the way, I'm in Canada -- that affects the availability of lots of things!) They seem to be less expensive than Sweet & Sara. They are currently out of stock, but they will be getting a lot more soon. Just go to veganessentials.com, click on " Food & Sweets, " and then find marshmallow products (bottom right). Earth Balance margarine and brown rice cereal. They come out fine. I too can't spend $8 for the boxed marshmallows often (1X per year for hot cocoa when we get a good snow fall here in MD). The rice mellow doesn't work for roasting at a campfire but it does the trick in this recipe. There are also some marshmallow cremes that are vegan. I believe Smucker's Marshmallow Icecream topping and and Ricemellow brand marshmallow creme are the only two. The recipe suggests cutting these into 16 bars, but I cut them smaller than that. They’re rich, very rich, so I think smaller bites are more guilt-free appropriate. Chocolate Peanut Butter Fudge Crunch Rice Krispy Treats, Version 2009 Recipe courtesy of Every Day with Rachael Ray magazine, September 2008 MAKES 16 PIECES Prep Time: 25 min (plus chilling) Cook Time: 10 min 2 sticks (8 ounces) plus 1 tablespoon unsalted butter (I used Earth's Balance) 6 oz semisweet chocolate, chopped (use favorite vegan chips) One 16-ounce jar creamy peanut butter (I used a natural peanut butter and it worked fine) 3 cups crispy rice cereal (I used brown rice crisps) 1/4 teaspoon salt 3 cups confectioners’ sugar (use favorit vegan version) 1. Line an 8-inch square baking pan with parchment paper. In a medium saucepan, melt half of the chocolate and 1 tablespoon butter over low heat. Remove from the heat; stir in 1 cup peanut butter, then 2 cups rice cereal. Spread the mixture evenly in the prepared pan; refrigerate until set, about 15 minutes. Wash out the saucepan. 2. The down side is that they are prepackaged, but nonetheless, they are still " rice krispie treats " . They are called " brown rice marshmallow treats " by " Glenny's " . The ingredients are (all organic) brown rice, brown rice syrup, evaporated cane juice, guar gum, sea salt, palm oil, vegetable glycerol, rice bran extract, and vanilla flavor. It was a while ago and I can't remember what all was in them but it was all-natural and they were vegan, and no peanut warnings! But those with nut alergies or who avoid nuts unfortunately won't be able to enjoy these, unless you can find a replacement for the peanut butter. They are called hemp crispies and have been a staple for my sweet cravings during my pregnancy. I picked up the reciepe because i was spending so much more buying them when i could make them for a fraction of the cost. They last a long while in the fridge but i DON'T recommend freezing them. 3/4 cup hemp nut seeds (they use nutriva brand and it takes 3 packets) 1 1/4 pound crispy brown rice cereal (2 boxes) 4 cups semisweet chocolate chips (i use tropical source) 4 cups organic smooth peanut butter (unsalted) 1 tsp cinnamon (ground) 4 cups rice syrup (they use lundberg but i don't think it would matter to much) *Oil a half sheet pan (i am sure you could use 2 brownie pans) *place crispy rice and hemp nut seeds in a large bowl *place chocolate, rice syrup, peanut butter, and cinnamon in a lrg sauce pan over low heat *cook stirring until ingreadients are quite smooth and liquidy (still remains pretty sticky) *Pour warm goo over crispy mixture mix untilevenly coated *While warm press into sheet pan *Let cool and cut in desired shape(s) (it is a lot of fun to make different shaped ones for parties and such) I hope those who try it enjoy it.
