You can also find " jello " thickened with agar-agar and with fruit pectin.

 

There are vegan marshmallows.  I have tried making them a couple of times, but I

never seem to beat them long enough.

trader joe and whole foods sells vegan marshmallows. i have a very healthy rice

krispy treat recipe.

3 large cups vegan marshmallows

3/4 cups nut butter or sunbutter

1 10-12oz box of brown rice crispies type cereal

1/2 cup dried cranberries or cherries chopped

2/3 cups of pecans  toasted

2/3 cups of cashews toasted

 

lightly coat botton and sides of pan or baking sheet

in microwave bowl. zap the marshmallows and nut butter,stirring after one minute

until melted, about 2 minutes.

add brown rice cereal, berries,nuts (or seeds), and stir, be careful not to

crush the cereal to small. wet and grease hands, press mixture evenly in to pan.

let bars set for 30 minutes...enjoy

Eat, Drink and Be Vegan has 2 recipes for vegan Rice Krispies. I haven't

tried them yet though.

What brand are they? We use to be able to get the ones made by Pangea (i

think) but they have been discontinued, at least that what the owner of the

vegan grocery store in town told me. The only ones they now have are made by

Sweet & Sara and they are delicious but two problems -- they have a peanut

warning on them (I have a son with a peanut allergy) and they are $8 for a

very small container. We really miss having marshmallows. (by the way, I'm

in Canada -- that affects the availability of lots of things!)

i don't remember. i will post that answer in a week after my husband p/u the

next batch. also, if your'e near a grocery store that sells kosher this time of

yr is a good time to check the passover section for gelatin free marshmallows.

The Passover marshmallows are made with fish gelatin.

I got all excited but then looked up Kosher gelatin and found this:

assumptions, it is also considered kosher to use it with dairy products.

Kosher law is very complex and the bones and hides used in gelatin

production are considered pareve. The general meaning of pareve refers to

foods that are neither milk nor meat, and many people assume this means that

the product is vegetarian. However, OU pareve certified ingredients can have

animal products, such as fish, eggs, and gelatin, in them.

" Kosher Gelatin Marshmallows: Glatt Kosher and 'OU-Pareve', " an article that

appeared in Kashrus Magazine, explains the distinctions. A quote from the

article is as follows:

" ...since the gelatin product is from hides or bones - not real flesh - and

has undergone such significant changes, it is no longer considered

'fleishig' (meat) but 'pareve', and can be eaten with dairy products. "

Veganessentials.com recently added a new type of vegan marshmallows called

Dandies. They seem to be less expensive than Sweet & Sara. They are currently

out of stock, but they will be getting a lot more soon. Just go to

veganessentials.com, click on " Food & Sweets, " and then find marshmallow

products (bottom right).

I use the same recipe as everyone else, but I substitute Rice Mellow

(comes in a tub) for the marshmallows. Earth Balance margarine and brown

rice cereal. They come out fine. I too can't spend $8 for the boxed

marshmallows often (1X per year for hot cocoa when we get a good snow

fall here in MD). The rice mellow doesn't work for roasting at a campfire

but it does the trick in this recipe. Good luck!

In the past I've made them with marshmallow creme. At the time I checked the jar

label it did not contain gelatin but it does contain egg whites.

You can make wonderful crispy treats with brown rice syrup, peanut butter (or

other nut butter), and chocolate chips.  There are also some marshmallow cremes

that are vegan.  I believe Smucker's Marshmallow Icecream topping and and

Ricemellow brand marshmallow creme are the only two.

Here is a Rachael Ray recipe also.  SUPER rich though.  They also melt easily

so want to keep chilled.

 

The recipe suggests cutting these into 16 bars, but I cut them smaller than

that. They’re rich, very rich, so I think smaller bites are more guilt-free

appropriate.

 

Chocolate Peanut Butter Fudge Crunch Rice Krispy Treats, Version 2009

Recipe courtesy of Every Day with Rachael Ray magazine, September 2008

 

MAKES 16 PIECES

Prep Time: 25 min (plus chilling)

Cook Time: 10 min

 

2 sticks (8 ounces) plus 1 tablespoon unsalted butter (I used Earth's Balance)

6 oz semisweet chocolate, chopped (use favorite vegan chips)

One 16-ounce jar creamy peanut butter (I used a natural peanut butter and it

worked fine)

3 cups crispy rice cereal (I used brown rice crisps)

1/4 teaspoon salt

3 cups confectioners’ sugar (use favorit vegan version)

 

1. Line an 8-inch square baking pan with parchment paper. In a medium saucepan,

melt half of the chocolate and 1 tablespoon butter over low heat. Remove from

the heat; stir in 1 cup peanut butter, then 2 cups rice cereal. Spread the

mixture evenly in the prepared pan; refrigerate until set, about 15 minutes.

Wash out the saucepan.

 

2. In the saucepan, combine the remaining 2 sticks butter and the salt; melt

over medium heat, stirring. Remove from the heat and stir in the remaining

peanut butter and the confectioners’ sugar. Spread half of the peanut butter

mixture over the cereal layer. Top with the remaining 1 cup cereal.

 

3. In a small bowl, microwave the remaining chocolate at medium power until

melted, 1 1/2 minutes. Stir into the remaining peanut butter mixture. Spread

evenly on the cereal-topped peanut butter layer; refrigerate until set, about 45

minutes. Cut into 16 pieces.

My husband found some vegan rice krispie treats at our local health food store.

The down side is that they are prepackaged, but nonetheless, they are still

" rice krispie treats " . They are called " brown rice marshmallow treats " by

" Glenny's " . The ingredients are (all organic) brown rice, brown rice syrup,

evaporated cane juice, guar gum, sea salt, palm oil, vegetable glycerol, rice

bran extract, and vanilla flavor. I tried one and they do taste like a krispie

treat except I found them to be a little on the sweet side.

We had some Salba ones too, they even come in cinnamon apple and they were

really good. It was a while ago and I can't remember what all was in them

but it was all-natural and they were vegan, and no peanut warnings!

This recipe is from my local coop. I love it!! They are vegan and full of

protien. But those with nut alergies or who avoid nuts unfortunately won't be

able to enjoy these, unless you can find a replacement for the peanut butter.

They are called hemp crispies and have been a staple for my sweet cravings

during my pregnancy. I picked up the reciepe because i was spending so much

more buying them when i could make them for a fraction of the cost. They last a

long while in the fridge but i DON'T recommend freezing them.

 

3/4 cup hemp nut seeds (they use nutriva brand and it takes 3 packets)

1 1/4 pound crispy brown rice cereal (2 boxes)

4 cups semisweet chocolate chips (i use tropical source)

4 cups organic smooth peanut butter (unsalted)

1 tsp cinnamon (ground)

4 cups rice syrup (they use lundberg but i don't think it would matter to much)

 

*Oil a half sheet pan (i am sure you could use 2 brownie pans)

*place crispy rice and hemp nut seeds in a large bowl

*place chocolate, rice syrup, peanut butter, and cinnamon in a lrg sauce pan

over low heat

*cook stirring until ingreadients are quite smooth and liquidy (still remains

pretty sticky)

*Pour warm goo over crispy mixture mix untilevenly coated

*While warm press into sheet pan

*Let cool and cut in desired shape(s) (it is a lot of fun to make different

shaped ones for parties and such)
