Does anyone have suggestions for vegan dishes? I looked at PETA's Easter pages, but faux ham does not sound appealing to me. Guest guest Posted April 7, 2009 Report Share Posted April 7, 2009 We are doing an Easter brunch this year as well. Now, the majority of my family is vegetarian. The in-laws tend not to be vegetarian (e.g., DH, my BIL) and my brother and his wife will eat " it " on occasion. My other BIL recently turned vegetarian for health reasons (he is very overweight). Excellent news for me. Having said that, here is our menu (we are lacto-ovo). It is heavy on the baked goods but they are all homemade and the intent is to " graze " while we play outside (hope it's good weather - there is snow right now): -Murielle's roast (I don't have the recipe, my SIL is making it, but it is made with tofu and nuts I believe. Any " roast " would be good). -quiche -a potato dish but I haven't decided which yet -scones from vegan with a vengence (super yummy) -salad (spinach with a balsamic vinegarette, candied pecans, mandarines or strawberries, and blue cheese on the side for those who want it) -carrot cake -banana bread or something similar -fruit platter -cheese platter Simple but it should be great.
