Easter dinner menu suggestions?

Hi,

 

For the past several years, we've had an Easter brunch rather than a formal

dinner, but this year, I'm feeling like doing it up. Does anyone have

suggestions for vegan dishes? I looked at PETA's Easter pages, but faux ham

does not sound appealing to me.

vegetarian times magazine has great holiday recipes.  you can comb through back

issues at the library or search their website: www.vegetariantimes.com

We are having a cook out- beans, potato salad, deviled eggs (obviously not

vegan), spicy peanut slaw (from the files) and burgers (probably red bean and

spinach).

I hope you get some good inspiration from the group :)

We are doing an Easter brunch this year as well. Now, the majority of my family

is vegetarian. The in-laws tend not to be vegetarian (e.g., DH, my BIL) and my

brother and his wife will eat " it " on occasion. My other BIL recently turned

vegetarian for health reasons (he is very overweight). Excellent news for me.

 

Having said that, here is our menu (we are lacto-ovo). It is heavy on the baked

goods but they are all homemade and the intent is to " graze " while we play

outside (hope it's good weather - there is snow right now):

 

-Murielle's roast (I don't have the recipe, my SIL is making it, but it is made

with tofu and nuts I believe. Any " roast " would be good).

-quiche

-a potato dish but I haven't decided which yet

-scones from vegan with a vengence (super yummy)

-salad (spinach with a balsamic vinegarette, candied pecans, mandarines or

strawberries, and blue cheese on the side for those who want it)

-carrot cake

-banana bread or something similar

-fruit platter

-cheese platter

 

Simple but it should be great.

Ruth's post convinced me that I really do want to stick with brunch. Thanks for

all the good ideas!

 

Here's what we've settled on:

 

Tofu broccoli quiche

Biscuits and cashew gravy

Home fries with tomatoes and mushrooms

Fruit salad

Green bean and chickpea salad

Macadamia-ginger carrot cake with coconut frosting

Peanut butter truffles

that look so good. please share the cashew gravy. this is what i ended up making

for Easter:

roasted brussel sprouts

lima and green beans w/ garlic

wf/gf biscuits-served w/ homemade preserves

vegan mashed potatoes

vegan wf/gf peanut butter chocolate pie

Not listing what daddy the conivore had.
