meals for 2 year old??

Hi, I wanted to ask if any one has any good ideas for meals your kids love?? I

am having a terrible time with my 2 year old not eating ANYTHING. He's never

been a big eater and always been in the low 10% weight but I was never worried

as he seems to be growing OK. He is VERY active though and the past few months

eating less and less. I

know this is very normal to some degree, but I need some new ideas on what to

try. Mostly he will only eat cheese(which I wished I could get him off of but

don't see happening) He won't normally eat foods that are mixed! (does eat fruit

and veggies)he won't eat tofu or temphe(anymore) , won't eat nut butter, (will

eat some nuts though) lately not crazy about beans or rice or pasta! I am at a

loss! please help!

I have this same problem every couple of months with my 30 month old. It seems

that I become very worried and then suddenly he starts eating again. I've been

trying to worry less, b/c he is still gaining weight and every time I really

start to worry, he starts to eat again at the same time.

 

A few things we do for insurance:

Smoothies - our faves are peaches, strawberries, bananas, blueberries, OJ, hemp

milk, tablespoon of coconut oil, tablespoon of flax seed - or strawberries, oj,

hemp milk, cashew or almond butter, flax seed

 

Veggie chili - we make chili full of veggies and beans and blend it in the

blender so it's completely smooth for him.

 

Chickpea cutlets - you can google to find the recipe - be sure to give him some

dips.

 

Pancakes - add sweet potato baby food and flax seed.

 

I also make full meal muffins from vegan lunchbox blog (I add choc chips to

these) and Dreena Burton's super charge me cookies and offer one or the other

pretty much every day.

Morningstar farms chickn' nuggets and corn dogs are my boys favorites. I

know " fake meat " is not the best but sometimes you have to give in to picky

eaters

I think we all go through this at some point. At one point I was completely

freaking out but somebody pointed me towards the recipe for Dad's Sneaky

Pudding. I joke with people that it's the only reason my child is still alive.

You can modify it anyway you want. I like to add figs, coconut milk, or some

other good fats. I also use Amazing Grass chocolate kids powder instead of cocoa

powder for an extra boost. You could add protein powder or probiotics also...

whatever you think your little one needs. Bottom line is kids love this stuff

and it gives moms the peace of mind that the little ones are getting a really

nutrient packed snack.

 

Dad's Sneaky Pudding

 

This recipe was created by Earthsave International's Chair of the Board ofs, Louisville Lawyer and amazing chef, John Borders.

 

1.5 cups frozen strawberries

1 banana

1-2 tsp. carob or cocoa powder

2 tsp. flaxseed oil

3-5 Tbsp. nut butter (cashew or almond)

2-3 Tbsp. orange juice or other healthy juice such as carrot juice

2 Tbsp. fortified soymilk

1/8-1/4 avocado

Set your little companion up on a stool beside you, ready to toss in the

ingredients and push the button. Place all the ingredients in a food processor

or blender. This works best in a food processor; you might add a bit more juice

or soymilk if you use a blender. Blend until smooth.

 

Makes 2 servings.

 

Per serving: 336 calories, 7 g protein, 40 g carbohydrate, 19 g fat.

 

For a toddler aged 1-3 years, using 3 Tbsp. cashew butter for the whole recipe,

a serving of this pudding provides approximately:

 

100% of the requirement for magnesium, folate, vitamin C and omega-3 fatty

acids.

Over 66% of the requirement for copper and potassium

Over 50% the requirement for pyridoxine and zinc

42% of the protein requirements

25% of the needs for calories and selenium

20% of the needs for iron

These are great suggestions. I would also add (as the mom of a 4 year

old who is just coming out of a picky eating phase and is now trying

everything and liking eggplant and brussel sprouts and asparagus

hooray) that sometimes just changing things up worked for me, get some

excitement going at mealtimes. Use a different plate (a grownup

plate, a paper plate, a new kids' plate), cup, utensil. Arrange the

meal in a happy face, a different happy face every time. Cut out

sandwiches or deli " meats " with cookie cutters. Try to get your son to

help in some way (choose the shape, plate, choose between two types of

fruit, hold his hands while he cuts shapes out). Endless possibilities

but changing stuff up seems to work for us whenever these picky phases

are happening.

 

But if all else fails, do the smoothies. At least you will know he's

getting some greens. Oh and the less pressure from you the better

they will eat, eventually. That one is hard and I can't always

practice what I preach!

I also use the deceptively delicous cookbook for ideas. So far all the recipes

i've tried have been a hit with my girls. butternut squash and pumpkin pancakes

and waffles are a hit. and the cookies with chickpeas. it harder to pull with

wheat free flour but it working.

Yum that recipe for the pudding looks good. I'm going to try that this weekend

with my 4 year old. Dana - do you live in Louisville? We're members of Earth
