Gluten-free vegetarian pie crust?

Hi all,

 

Does anyone know of any gluten-free vegetarian pie crust ideas? I have a

vegetarian friend who was recently diagnosed with celiac disease and is, of

course, missing many foods, but REALLY misses pies. She was hoping to find some

kind of pie crust or crumble crust using gluten-free cookies or something like

that. She would prefer it vegan, but would use butter if necessary. Thanks in

advance!

There's a great one in Jo Stepaniak's allergy-free cookbook, but,

unfortunately, I am no longer in possession of that book. Check your

library!

I love this book and it has all sorts of recipes. It has a pie crust recipe

and even pizza crust.
