chocolate chip cookie with chickpeas

book: deceptivley delicous by, jessica seindfield

 

non stick spray

1 cup firmly packed light or dark brown sugar

3/4 cups vegan margerine (my version)

2 large egg whites

2 tsp pure vanilla extract

1 15 oz can drained and rinsed chickpease

2 cups semi-sweet chocolate chips

3/4 cups chopped walnuts (optional)

3/4 cups raisins

2 cups all purpose flour

1/2 cup old fashioned oats

1 tsp baking soda

1/4 tsp salt

 preheat oven to 350

beat sugar and margerine until smooth,beat in eggs and vanilla, then chickpeas 

and chocolate, add flour,oats, and baking soda and salt. mix on low until thick

dough forms. drop by spoonfools on baking sheet, press gently to flatten, bake

until golden brown 11-13 minutes.

 

ilove this book and every thing can be made vegan and wheat free excpet the few

recipes with meat in it.

Sounds good. unfortunately my son is allergic to legumes (including peanuts,

peas, lentils & chickpeas). But, I have tried other beans (white beans) in

recipes, and they're a good binder and add protein. J
