Recipe: Orange Ginger Baked Tofu

 

Did you know that your skin can synthesize vitamin D if exposed to enough

sunlight on a regular basis? Take advantage of the sunlight this summer, but

be sure to protect yourself against sunburns. If you won't be spending much

time outdoors, you can fortify your diet with vitamin D. Many products,

especially vegetarian foods, contain this essential vitamin. Enjoy a healthy

treat from the tropics and make this Orange Ginger Baked Tofu recipe with

fortified OJ.

 

Ingredients:

 

1 lb. extra firm tofu, drained & pressed

 

Marinade:

2 tsp. ginger,

3 cloves garlic, minced

2 tsp. finely grated orange zest

1/4 cup orange juice

1/4 cup dry white wine

1/4 cup pure maple syrup

4 tsp. soy sauce

2 tsp. veg oil

 

Directions:

 

Preheat oven to 375 F while preparing the marinade.

Combine all ingredients for the marinade in a small bowl and whisk

vigorously.

Cut the tofu into 8 slices crosswise; pour 1/2 marinade into the baking dish

and saturate tofu slices; pour the other half of marinade over the tofu; let

sit 10 minutes.

Cover baking dish with aluminum foil and bake for 20 minutes; remove cover

and flip tofu pieces over; cook 15 more minutes uncovered (Tip: to give the

tofu more chewiness, place in the broiler for 2 minutes on each side).

Garnish with some thin slices of orange, and serve with vegetables.

Health: Vitamin D & Heart Health

 

A recent study reveals the link between low vitamin D levels and

cardiovascular disease risk factors. Past studies have shown that vitamin D

protects against osteoporosis, certain cancers, high blood pressure,

diabetes mellitus, multiple sclerosis and other illness.

 

The research, possibly the first of its kind, analyzed data from 7,186 men

and 7,902 women obtained from the Third National Health and Nutrition

Examination Survey. The researchers reported that low levels of vitamin D

(less than 21 ng/mL) were associated with an increased prevalence of

hypertension (30%), diabetes mellitus (98%), obesity, and high serum

triglyceride levels (47%) compared to those with higher levels.

 

Many soy and grain milk brands on the market, in addition to orange juice

and conventional vitamin supplements, offer vitamin D fortified products.

Inspiration: A Voice for the Voiceless

 

Diana Handwerker is a teenager making headway for change in her hometown of

Boca Raton, FL. Two years ago, she and her mother were driving down a long

two-lane road when a stray dog ran out from a bush. The driver on the

opposite side of the road did not see the dog and hit him. Watching several

people steer around the pup and continue on their way, Diana and her mom

intervened to take the dog to an animal hospital.

 

That experience changed her. She says, " I began to realize that there were

so many innocent animals being hurt, being ignored. I started my club and a

couple of months later witnessed a similar incident where the animal did not

survive. I took this as a sign that I must do something. I wanted to make

people more aware of pets and the problems facing all animals. "

 

As President of her school's animal protection club, Bobcat Paw Pals, Diana

speaks out on a range of issues, from pet overpopulation to the Canadian

seal hunt. The group works hands-on with local animal rescues and

occasionally prints messages in the school newspaper. Diana was recently

awarded the Humane Teen of the Year by Humane Teen, a website of young

activists.
