Lentils with Spinach (vegan) 2 cups lentils, rinsed and drained 6 cups water 1 serrano chili, seeded and minced (optional; use whatever type of chili you prefer) 2 bunches fresh spinach or swiss chard, chopped or 20 oz. frozen leaf spinach 1 medium onion, sliced thinly 2 cloves garlic, peeled and minced 5 Tbs olive oil 1 tsp ground cumin salt and pepper to taste Combine lentils, water and chili in a pot. Bring to a boil and simmer until lentils are tender, about 40 minutes. Wash spinach or chard thoroughly. Keep pinkish roots and cook together with leaves. If using chard, cut off stems. ( these you can use for a vegetable dish, steamed until tender and served with balsamic vinegar, salt and pepper) Heat oil and fry onion and garlic until soft. Add spinach, onion and garlic to lentil. Add cumin, salt and pepper. Yield: 6 servings.
