Serving Size : 8 Preparation Time :0:00 Categories : Fix-it-Fast Vegetarian CB Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil -- or vegetable oil 1 small onion -- chopped (about 1 cup) 1 small bell pepper -- chopped 2 cloves garlic -- minced 12 ounces vegetarian burger 3/4 cup water -- (to 1 cup) 1 8 oz can tomato sauce 1 6 oz can tomato paste 1 tablespoon Mexican Seasoning Mix -- (page 307) or to taste 1 teaspoon cornstarch -- or 2 tbsp. quick oats 1 teaspoon brown sugar -- or other sweetener 1/2 teaspoon salt 4 hamburger buns -- (white or whole wheat) chopped onions or sliced green onions -- optional Heat the oil in a nonstick skillet over medium-high heat. Stir and cook the onion, and garlic until tender (or microwave on high in a covered microwave safe dish for 5-6 minutes). Add the vegetarian burger, stirring until brow, about 2 minutes. Stir in the water, tomato sauce, tomato paste, Mexican Seasoning, cornstarch, brown sugar, and salt, whisking until thoroughly mixed. Cook for 5 minutes over medium heat, stirring frequently, until the mixture is hot and thickens. Taste and adjust seasoning. Toast the hamburger buns. Spoon 1/3 cup of mixture onto the bottom half of each bun. Top with onions if desired. Cover with the bun tops or serve open-faced. Store the mixture in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 6 months. Slow Cooker Directions: Combine all ingredients and cook in slow cooker on low for 3 to 4 hours. Instead of Mexican Seasoning Mix: use 1/2 teaspoon chili powder and 1 teaspoon paprika.
