Savory Beans

Amount Measure Ingredient -- Preparation Method

1 pound pinto beans

5 cups water -- (to 6 cups)

1 medium onion -- diced

2 ribs celery -- diced

1 small green pepper -- seeded & diced

2 cloves garlic -- minced

1 tablespoon olive oil

1 3/4 teaspoons salt -- (to 2 tsp)

1/2 teaspoon oregano

1/2 teaspoon thyme

 

Sort and rinse beans. If desired, presoak beans and rinse. In a 3 1/2 quart

slow cooker, combine all ingredients. (Use 5 cups of water when cooking on low

and 6 cups when cooking on high.)

 

Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours or until

beans are tender. Serve hot.

 

Store the beans in an airtight container in the refrigerator for up to 1 week or

in the freezer for up to 6 months.
