Rinse the fruit and add to the jar. Loosely cover the jar with plastic wrap, leaving space for gases to escape as the liquid ferments. Set the jar aside at room temperature in a sunny place for 3 to 5 weeks, depending on the weather and ripeness of the fruit, until the liquid is amber in color with a thick, milky-white layer on top. Spoon off the layer and save it to start another batch of vinegar. Strain the liquid through cheesecloth into a clean container and then funnel it into a bottle. Cork the bottle and use the vinegar as your need it. It improves with age. - - - - - - - - - - - - - - - - - -
