Italian Bean Soup

2 cups navy beans -- or small white beans

9 cups water

1 medium onion -- chopped

1 tablespoon olive oil

2 teaspoons salt

2 cloves garlic -- or 1/2 tsp. garlic powder

2 bay leaves

1 15.5 oz can diced tomatoes -- or stewed tomatoes

1 cup elbow macaroni

1 teaspoon brown sugar -- or other sweetener

1/2 cup grated reduced-fat cheddar cheese or

nondairy cheese -- optional

 

Sort and rinse beans. Place the beans, water, onion, oil, salt, garlic, and bay

leaves in the slow cooker. Cover and cook on low for 10 to 12 hours or on high

for 5 to 6 hours or until beans and onions are tender.

 

Stir in tomatoes, macaroni, and sugar, and cook on high for about 30 minutes or

until the macaroni is tender.

 

Top each serving with cheese if desired.
