Mexican Crudités - Shredded Cabbage/Lettuce

1/4 medium head green cabbage or iceberg lettuce, cored -- thinly

shredded

 

1/4 teaspoon salt

 

 

 

Toss the cabbage or lettuce with the salt. Serve right away or set aside at

room temperature for up to 2 hours.

NOTES : I always include some very thinly shredded green cabbage or iceberg

lettuce on my Mexican crudités plate. Despite the bad press iceberg lettuce

receives these days and any disaffection you might have for coarse, stiff

pieces of cabbage, when finely cute, these leaves provide a moist, green

crunch that is irreplaceable and completes the meal.
