I'm making a few of the recipes at this site: http://www.pcrm.org/health/Recipes/thanksgiving.html I've also made this: Braised Kale with Autumn Fruit 1 medium bunch of kale 1 clove of garlic, chopped 2 tablespoons extra virgin olive oil 1 15-oz. can chickpeas 1 apple, washed, peeled, sliced thinly 1/2 cup dried cranberries 1/4 cup feta cheese, crumbled salt and pepper (total calories for recipe approximately 550) Wash and chop kale coarsely. Remove stems. In large frying pan, warm olive oil. Add garlic and saute 1 minute. Add sliced apples and let cook 4-5 minutes on medium. Stir in chickpeas and let cook 2 more minutes. Add kale and cover. Stir after 2 minutes. Let sit over low heat for 10 minutes. Remove cover. Stir in cranberries and feta, season with salt and pepper, serve warm. Serves 2 as main dish or big side-dish, 4 as small side-dish; can easily be doubled or tripled as needed ---------- And another kale recipe: Kale with root vegetables 1 bunch kale 1 medium parsnip chopped into bite-size pieces 1 medium turnip chopped into bite-size pieces 2 medium red potatoes chopped into bite-size pieces 1 cup chopped leek 3 cloves garlic diced 1 tablespoon olive oil balsamic vinegar pepper water (this also coincidentally comes to about 550 calories total) Clean kale, chop into bite sized pieces. In a large pot put in 1/4 to 1/2 inch deep water. Put steamer in pot, put in kale, parsnip, turnip and potato. Turn down heat to low boil. Cover pot. In small skillet heat 1 tablespoon olive oil. Add leek and garlic and saute until soft. Remove leek and garlic from heat when done cooking. In the meantime, keep an eye on the kale and root vegetables. When kale is cooked through, and root vegies are soft but not mushy, turn off heat. Put kale and root vegies in large serving bowl. Add leeks and garlic, and balsamic vinegar and pepper to taste. Toss together and serve warm. This is good served with rice or as a side dish. Serves 2-4. Preparation time 30-40 minutes (unless you are a slowpoke like me and/or have cats weaving around your ankles!!!)
