Quick Vegetarian Black Bean Chili

3 tablespoons olive oil

1 large yellow onion -- chopped

1 large yellow bell pepper seeded, deribbed, and

cut into thin lengthwise strips

1 can diced tomatoes (15 oz) -- drained

1 tablespoon ground cumin

1 teaspoon sweet Hungarian paprika

1 teaspoon cayenne pepper

1 teaspoon dried oregano

1 teaspoon kosher salt

2 cans black beans (15 oz each)

 

In a large pot, heat the olive oil over medium heat. Saute the onion

and bell pepper until soft, 8 to 10 minutes. Stir in the tomatoes,

then

stir in the cumin, paprika, cayenne, oregano and salt. Cook for 3 to

4

minutes, then add the black beans. Bring to a boil, reduce the heat,

and

simmer for 20 minutes. Let cool, cover and refrigerate for one day.

Reheat before serving.

 

Yield: 6 to 8.

0 cholesterol, 522 mg sodium, 14 g fiber. Calories from fat: 25
