Cranberry and Poppy Seed Muffins

4 ounces unsalted butter

1 1/4 cups sour cream

2 large eggs

1 tablespoon vanilla extract

2 1/4 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup sugar

4 teaspoons poppy seeds

5 ounces fresh or frozen cranberries -- (thawed)

maple syrup -- to serve

 

1. Preheat oven to 375F (190C/Gas 5). Melt the butter, leave to cool for a

minute or two, then beat in the sour cream, followed by the eggs and the vanilla

extract.

 

2. In another bowl, mix the flour, baking powder, baking soda, salt, sugar and

poppy seeds. Stir the dry into the wet ingredients along with the cranberries.

 

3. Line 1- muffin tins (see tip). Fill each generously with the muffin mixture

and bake for 20 to 25 minutes. Test with a skewer -- it should pull out clean if

muffins are done. Lift onto a cooling rack, spoon over some maple syrup and eat

while they are still warm.

 

LINING TIP - Alastair suggests lining the muffin tins with squares or circles of

parchment. " Large discs of very loosely scrunched and lightly oiled greaseproof

paper (they should come right up the sides of the tin so they become paper

muffin cases). "
