Unfortunately, the enzyme is usually rennin form the intestines of an unweaned baby cow. Thousands of years ago, however, even the Sumerians knew of making cheese using other methods, like galium, or citrus juice. I make cream cheese by heating cream to 100 F and the removing from het and adding 3 or 4 T of lemonjuice, letting it cool, and then pouring it into a colander lined with cheesecloth. Finally I hang the cheesecloth and then put it back in the colander with a weight of some kind on top, like another pot. The idea is to get the moisure out. You can find vegetarian cheese if you look into it. Trader Joe's has a list. If you're really lucky yu can get vegan cream cheese and sour cream from the store.
