Honey-Orange Breakfast Oatmeal With Bananas

1 1/2 cups orange juice

1 small banana -- peeled and chopped

(about 1/2 cup)

2 teaspoons honey

1/2 teaspoon grated orange peel

1 cup raw quick-cooking rolled oats

1 cup skim milk

1/8 teaspoon freshly grated nutmeg

 

In a medium saucepan, combine the juice, banana, honey, and orange peel and

bring to a boil over high heat. Add the oats and cook over medium heat for 1

minute. Remove from the heat, cover, and let stand until thickened, about 3

minutes. Spoon into bowls, pour the milk around the cereal, and dust with grated

nutmeg.

 

Yield: 2 servings (about 3 cups)

 

About 345 calories, 28 calories from fat, 3 grams total fat, 1 gram saturated

fat, 2 mg cholesterol, 67 mg sodium, 69 total carbohydrates, 1 gram fiber, 12

grams protein.
