flax seed crackers

Tammy, when I made mine, I had to wait until it was REALLY dry to flip it...

I've found that when dehydrating things like that, the flipping is really

just to " finish it off " -- it's not like turning things over in an oven,

which is what I first thought.

 

I also found that my flax crackers were really good the first day or two,

but after that, yuck. The texture was still fine... just the taste... they

seemed to go from rather tasty to rather like eating very thin and crunchy

cardboard with flecks of dried whatever.

From now on, I'm only going to make enough to last a day or two, rather than

the humongous batch I made before.

Probably best in terms of the enzymes that way, anyway.

Yep, too early. The dehydrating times usually given in recipes has quite a

variable. I know that most of my favorite recipes were written by someone in

Arizona and I live in Washington state, much more humidity than AZ hence my

crackers stay in the dehydrator MUCH longer than the recipe calls for.

 

Just play with it and you'll get the hang of it.

At this point I slide my crackers out of teflex sheet and put them on

dry side on regular mesh. Several seeds are usually left behind.

At the end they are completely dry.

I usually just put an empty mesh tray on top of the cracker that is still on the

teflex and turn both trays. Then just remove the top tray & teflex sheet and

voila! The crackers are turned. Go on to the next shelf.

 

Did that make any sense?

Yeah you should wait longer before flipping them over. That's all. I

had the same problem. Also if you like chewy crackers leave them in a

shorter time (once flipped) and if you like crispy then leave them in

a long time.

There is a compromise between wasting electricity on fan working and

learning how to slide them.

I am russian and it shocks me to see how people here waste electricity.

Also, I turn it off when they are chevy, but after laying for a day in

the sunny place they become crispy. I like crispy.

Thanks for all of your suggestions. The crackers seemed to turn out ok

but tasted a little green. Does that make sense? The thinner crackers

tasted more " cracker like " . I am wondering if the thicker mix should

have been dehydrated more. The are all crunchy - just in varying

degrees. I have them in air tight containers but not refrigerated.

How do I tell if they go bad?

 

I am still working on 100% raw. Right now I eat only fruit in the

morning. I am trying to go without bread, pasta. coffee and meat. I

tried going all raw before without any transition and " starved " , lost

12 pounds in two weeks and started having health problems. I had to

give up my exercise program for a while. At the time, I was swimming

about a mile and 1/2 a day. I am swimming again (not as far) but feel

that I need to ease into a totally raw diet. I am hoping to be raw by

August 1st but am not stressing about it. I know when the time is

right it will happen.

If the cracker will not peel/fall off the teflex sheet easily, then it

is too soon to remove it. Flip it back over and dehydrate some more.

In my experience, recipes don't always work time-wise.... perhaps it

is due to humidity in the air...

I usually dehydrate for 1-2 hours (up to 4) and then flip.

The earlier you can flip, the sooner you can score the crackers, in my

experience (it doesn't work as well for me to score them before they

are ready to be flipped.)
