Hi,

Oh, lovely fennel! I so love fennel! Here’s our go-to recipe when our

CSA box smells of that delicious licorice-ness before we even open it!

:-) And if you don’t have this cookbook – buy it immediately! I use it

more than any other cookbook and have bought it for gifts and often just

keep it on the kitchen table – I use it that much. :-)

Fennel Orange Muffins

From Madison Area Community Supported Agriculture Coalition’s cookbook,

“From Asparagus to Zucchini: A Guide to Cooking Farm-Fresh Seasonal

Produce” (2004)

 

1 medium orange, juiced (or peeled, seeded and pureed)

2 eggs

½ cup vegetable oil

¾ cup brown sugar

1 tsp vanilla

2 cups grated fennel bulbs and greens

2-¼ cups flour

1-½ tsp. baking powder

½ tsp salt

 

Heat oven to 350*. Oil muffin cups or use paper liners. Combine orange

juice/puree with eggs, oil, sugar vanilla and fennel in a bowl. Sift

flour, baking powder and salt, and gently fold into wet ingredients. Do

not overmix. Spoon into muffin cups and bake 20-25 minutes until golden

brown. Makes 8-12 muffins.

Aloha, My CSA box is filled with fennel this week. I am at a loss as

what to do with 12 stunningly beautiful fennel. Help?

I wish I could afford fennel! My first thought is definitely

roasting. That's my first inclination with all vegetables because

they just taste so good! :)

Thanks for all the GREAT fennel ideas....I am off and cooking. We used

some last night with roasted brussel sprouts/onions/fennel. Excellent

start. The cookbook recommended looks like a " must have " . Thanks again!
