raw ice cream recipes

Here's two yummy icecream recipes Matthew's and Sarma's book, " Raw Food Real

World " (Get the book if you want more ;-) )

 

COCONUT ICE CREAM:

 

1 1/2 C coconut meat

1 1/2 C coconut water

1/4 C Agave nectar

3 T coconut butter

1/2 t lemon or lime juice

1 teaspoon vanilla extract (or seeds from 1/2 vanilla bean)

3 packets of stevia

1/4 t sea salt

 

Puree all ingredents in blender until smooth. Chill completely in refrigertor

and then process in an icecream maker according to the manufactor's directions

(Note: most of the time I skip processing in the icecream maker, and just freeze

the mix and later place in refrigertor to defrost and soften before eating.)

 

Vanilla Ice Cream:

 

2 C raw cashews, soaked 4 hours or more (If you're not a fan of " cashew nut

taste " don't worry because you can't even taste it in this recipe!!)

2 C coconut meat

1 C water

1 C agave (note: I usually use a little less)

1/4 coconut butter

2 T vanilla extract, and 2 addition teaspoons

1/2 t sea salt

 

Process as above instructions state. You can make many flavor variations with

this vanilla base. For example, add a few fresh peppermint leaves to the blender

and stir in raw cacao nibs to make mint chocolate chip.

 

Note: If you don't want to gain too much weight, be careful about eating this

much in one day and all the time! If you don't know where to get coconut butter,
