I've been a vegetarian for 24 years and a vegan for 12. I normally eat a very low fat diet but have always struggled a bit with my weight. It seems as if things have gotten worse since my daughter is now old enough to rely mostly on table food. Since toddlers need about 40% of their calories from fat, I've been preparing meals that contain more nuts, seeds, avocados, oils, and other forms of healthy fats. Although these things are great for my 15-month old, they've been making me fat! I need some advice on how to continue to make meals that are appropriate for my little one but don't pack on the pounds for me.
