Guest guest Posted September 30, 2003 Report Share Posted September 30, 2003 * Exported from MasterCook * Samosas with Cilantro Tomato Chutney Recipe By :Byerly's Minnesota Serving Size : 10 Preparation Time :0:00 Categories : Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon vegetable oil 1/2 teaspoon cumin seed 1/2 cup finely diced carrots 1 1/2 tablespoons finely chopped shallots 1 teaspoon minced fresh gingerroot 1 teaspoon minced garlic 1/2 serrano pepper -- cored, finely diced 1 medium potato -- peeled, cooked, cubed (1/4-inch) 1/2 cup frozen baby peas -- thawed 1 1/2 tablespoons chopped fresh cilantro 1 teaspoon ground coriander 1/2 teaspoon kosher salt 1/4 teaspoon ground cumin 1/4 teaspoon garam masala 1/8 teaspoon ground turmeric 2 1/2 (15-oz) packages refrigerated pie dough vegetable oil 1 cup Cilantro Tomato Chutney as follows... 11 1/2 ounces Tomato Chutney -- (essence of India) 1 cup fresh cilantro leaves 3/4 cup fresh mint leaves 1 fresh serrano chile -- cored 1 tablespoon fresh lime juice In large skillet, heat oil over medium-high heat. Add cumin seed; cook for 30 seconds. Stir in carrots, shallots, ginger, garlic and chile. Cook, stirring constantly, 2-3 minutes. Remove from heat; stir in potatoes, peas, cilantro, coriander, salt, cumin, garam masala and turmeric. Cool completely. Allow pie dough to sit at room temperature 15 minutes before working with it. To Assemble: Cut 4 (3 1/2-inch) circles out of each sheet of pie dough. Place 2 rounded teaspoonfuls of filling in the center of each circle. Wet the edge of circle with water. Fold dough over filling and pinch edge shut. Using a fork, poke a few holes in each samosa. Lightly brush tops and bottoms of samosas with vegetable oil. Place samosas on greased baking sheet. Bake in a preheated 375F oven until golden brown (about 12-15 minutes), turning over after 7 minutes. Serve hot or room temperature with Cilantro Tomato Chutney (below). Amount: 20 samosas Cilantro Tomato Chutney: Place 1 (11.5 ounce) jar Essence of India Tomato Chutney, cilantro leaves, fresh mint leaves, serrano chile (seeds and ribs removed), and lime juice in a food processor or blender. Cover and blend until smooth. Refrigerate, covered, up to 2 days. CUTTER TIP - Use a 6 ounce custard cup, turned upside down, for cutting guide if you do not have a 3 1/2-inch biscuit cutter.
