Thai Tofu in Garlic Red Curry

Amount Measure Ingredient -- Preparation Method

2 pounds firm tofu -- one-inch cubes

6 tablespoons olive oil -- divided

1/2 cup tamari soy sauce -- divided

1 pound shiitake mushrooms -- sliced

1/4 cup minced fresh gingerroot

1/4 cup peeled garlic cloves

4 teaspoons red curry paste

28 ounces light coconut milk -- (canned)

1/4 cup firmly packed brown sugar

1/4 cup chopped fresh basil

4 bunches spinach -- washed, stemmed

fresh basil leaves -- optional

6 cups cooked basmati rice -- to serve

 

In large cast iron skillet, combine tofu, 4 tablespoons olive oil and 1/4 cup

tamari soy sauce, mixing gently so tofu cubes do not break. Saute, stirring

often, over medium-high heat until golden brown. Add mushrooms; saute for an

additional 10 minutes. Heat remaining 2 tablespoons olive oil over medium-high

heat in a separate medium skillet; add gingerroot and garlic. Saute until garlic

browns slightly. Add curry paste, coconut milk, sugar, remaining 1/4 cup tamari

soy sauce and basil. Cook, whisking constantly, just until sugar is dissolved

(4-5 minuts). Add the tofu mixture.

 

In separate pan, saute freshly washed spinach over medium-high heat stirring

constantly with tongs until wilted and tender, but still bright green. Place 1/4

cup wilted spinach in center of plate. Spoon 1 1/2 cups tofu mixture over

spinach. Garnish with fresh basil leaves, if desired.
