Tofu and Fried Rice

Amount Measure Ingredient -- Preparation Method

3 tablespoons vegetable oil

1/2 cup sliced green onions

1/2 cup sliced celery

1/4 teaspoon salt

1/2 pound tofu -- drained, cubed

2 cups cooked rice

1 cup bean sprouts

1 1/2 tablespoons soy sauce

1/8 teaspoon pepper

 

Heat oil in wok or skillet over medium-high heat. Stir-fry onion, celery and

salt 3 minutes. Add tofu, reduce heat; cook 5 minutes, stirring occasionally.

Stir in rice and bean sprouts, cook, covered, until mixture is hot (3-5

minutes). Stir in soy sauce and pepper.

Amount: 4 main dish servings or 8 accompaniment servings
