Guest guest Posted August 7, 2005 Report Share Posted August 7, 2005 Tis the time of the year when squash and zuchinni overfloweth from the garden, and ones mind naturally turns to creative ways to use the overabundance! We had this for dinner last night, with some fresh corn on the cob. 1 zuchinni 1 yellow squash (straight or crookneck) 1/2 red onion 2-3 tbsp olive oil 1/4 cup parmesan cheese (grated or shredded) seasoning to taste (I use vegit, salt, pepper) Slice vegetables and toss with olive oil & parmesan. Place in microwave safe casserole dish and cover with lid. Microwave approx. 5 minutes (depending on microwave power) until just tender. Enjoy!
