I haven't tried this yet - just found the recipe.

 

* Nutty Yam Banana Bread

(Makes 16 servings.)

Ingredients:

 

1/2 cup mashed bananas (about 1)

1 cup fresh, mashed sweet potatoes or 1

(15-ounce) can sweet potatoes, drained and mashed

3/4 cup light brown sugar

1/4 cup canola oil

1 teaspoon vanilla extract

2 eggs

1 cup all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 cup chopped walnuts

Directions:

Preheat the oven to 350 degrees.

Coat a 9 by 5 by 3-inch loaf pan with nonstick cooking spray.

In a large bowl, mix together the mashed bananas, mashed sweet

potatoes, brown sugar, oil, vanilla and eggs. In a separate bowl,

combine the flour, baking soda, baking powder and cinnamon. Stir

the flour mixture into the banana mixture, mixing only until

combined. Stir in the walnuts. Bake for 40 to 45 minutes, or

until toothpick inserted in the center comes out clean.

are also low in fat and sodium.
