This technique of using powdered nuts for thickening is a healthful trick for those avoiding dairy products. MAKES 2 1/4 CUPS. 1. Put the almonds and water into a blender and blend on high until pureed. Add the remaining ingredients, except for the oil, and blend until combined. With the motor running, slowly pour in oil and run until the dressing is thick and creamy. Add the yogurt if you want a thicker consistency.
