Guest guest Posted December 20, 2003 Report Share Posted December 20, 2003 traditional for us -- tofu in a strong flavored soup -- make sure you press and drain the tofu well before making this recipe. do not use silken! * Exported from MasterCook * Hot and Sour Soup Recipe By :Soy Sisters Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces dried shiitake mushrooms 6 ounces canned bamboo shoots 1/2 pound firm tofu -- (Midwest-Harvest brand) 1 quart vegetable broth 1 tablespoon soy sauce 1/2 teaspoon ground white pepper 4 tablespoons vinegar 2 tablespoons cornstarch 1 egg (optional) 3 green onions 1. In a small bowl, cover mushrooms with warm water and let sit for 30 minutes. Discard water. Slice mushrooms into thin strips discarding stems. Pour vegetable broth (water or chicken broth if you prefer) into a 3 quart saucepan. Add soy sauce, bamboo shoots, and mushrooms to broth. Bring to a boil over high heat, then immediately reduce heat to low. Simmer for 3 minutes. 2. Press tofu then slice into narrow strips. Add pepper, vinegar, and tofu to the broth. Bring to a boil again. Mix cornstarch with 3 tablespoons of water, and whisk out all lumps. Gently stir cornstarch mixture into boiling broth. Continue to stir until soup is thickened. Lower temperature again. Lightly beat egg. Slowly stir egg into soup. Remove from heat. Place in bowls and garnish soup with green onion tops sliced in 1 " long pieces. Serve immediately. Makes 6 servings. *If you do not have white pepper, use black pepper instead, but increase the amount to 1 teaspoon.
