I can't warm to the taste of dried seaweed, so i'd skip that. * Exported from MasterCook * Herby Tofu and Oat Sausages with Nutty Mash Recipe By :Marilyn Glenville Serving Size : 10 Preparation Time :0:00 Categories : Hrt Tofu Vegetarian {Posted} Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- HERBY TOFU AND OAT SAUSAGES: 7 ounces oatmeal -- (200 g) and additional oatmeal for coating 9 ounces silken tofu -- (250 g) 1 Handful fresh thyme 1 Large bunch fresh chives 1 Large handful flat-leaf parsley 1 Large handful mixed dried seaweed flakes 3 tablespoons hummus -- (preservative free) 5 ounces mature Cheddar cheese -- coarsely grated (150 g) 1 tablespoon honey 2 tablespoons soy sauce 1 tablespoon no-added-sugar Worcestershire sauce -- Vegetarian 1 egg Freshly ground sea salt and black pepper Flour -- for dusting Olive oil -- for frying NUTTY MASH: 2 1/4 pounds potatoes -- (1 kg) 2 tablespoons walnut oil 2 tablespoons olive oil Freshly ground sea salt and black pepper 3 ounces almonds -- finely chopped (85 g) 3 tablespoons flat-leaf parsley -- chopped AUTHOR'S NOTE: There is such a variety of goodness in this one delicious dish. Plant hormones are available from the tofu, hummus (made from chickpeas), parsley and potatoes. The oatmeal is another source of phytoestrogens and is especially good for maintaining healthy cholesterol levels as well as supplying excellent levels of fiber, which helps to prevent unwanted old estrogens circulating in the body. <http://www.marilynglenville.com/about.htm> You can make a nice gravy for these sausages by thickening some miso broth (see page 176) with arrowroot and serving the sausages with some fried onions, into which some sesame seeds and/or linseeds have been mixed. MAKES 8-10. PREPARATION: about 30 minutes, plus 10 minutes chilling; COOKING: 20-25 minutes. Put all the ingredients for the sausages in a food processor with generous seasoning to taste and process until blended together. Do not over-mix or the sausages will be too dense. With floured hands, form the mixture into small tennis ball-sized spheres, roll on a coating of more oats and then pat these out into sausage shapes (try to give them four long flat sides as this will make the frying easier). Chill for about 10 minutes. (If you had trouble getting good shapes, they will be easier to shape after chilling.) While they are chilling, cook the potatoes for the mash in boiling salted water until tender. Drain well and steam dry in the hot pan. Keep warm. Fry the sausages gently in hot olive oil, turning regularly, until well browned on all sides, about 15-20 minutes in all. Mash the dried potatoes, adding the walnut and olive oils and seasoning. Finish by mixing in the chopped nuts and parsley. Serve at once, accompanied by the nutty mashed potatoes.
